May second, 2014 was so exciting day for me, as first time ever, held the honor to cook and serve my country’s famous dishe for international friends.  XXXX was the dish I prepared.I  It was irreplaceable moments and unforgettable day and memories. Every one, certainly enjoyed the food, it was big day for me.

Gusts and residents extended their nice words of thanks and praised the dishes flavor and quality, it meant a lot to me.  Worthwhile to mention, house mother was so supportive and provided anything needed for cooking in time .

 

I also invited my friends, who also helped me cooking, it is really fun to serve food together with friends, always looking forwards to serve foods again and again for residents, it was simply just fun and honor.  Recipe of Fried Rice (Afganistan)

1. Saute beef until it brown lightly and then add sliced onion and sautetogether till the onion become fairly dark.

2. Add 2 cups of water, salt, charmasala, cumin. Cover with lid and simmer until meat is tender, about 20 minutes in a cooking pan.

3.Collect meat from the juice and set juice aside. Chop the carrots in to pieces, Saute carrots in oil, cook it until it is lightly brown Remove carrots from the oil, then, add raisins to the oil and cook till it gets swelled-up.

4. In a large pot boil water and then add rice (soaked in water for 4-5hours), boil rice until the grains becomes longer and tender but not mushy, drain the water.

5. Add rice to the same large pot and pour the meat juice on rice and mix it well. Let the juice be absorbed in rice and then add marinated beef carrots and raisin on top of the rice and steam it for about 20-30 minutes in low flame.

6. Serve on platter, make sure the carrots and raisins show up on top.
